The ultimate vegan burger
When I first moved to the United States, I remember how much I liked burgers. I wanted to eat them constantly but when I changed my lifestyle to no animal protein the desire to eat them was no longer there. Then, one day I was walking in my neighborhood in Madrid and passed by the most delicious smell of freshly baked bread. I couldn´t resist.
My initial thought was to go home quickly and resist the urge to eat gluten (I have an autoimmune condition- not celiac) but the smell of those baked brioche buns were calling my name. So I decided to grab a few and utilize what I had at home to create a decadent vegan burger. I have to admit these are pretty darn good and they freeze perfectly.
Makes 4
Ingredients :
1 cup cooked lentils
1 cup cooked sweet potato
½ cup cooked forbidden black rice
1 tbsp miso paste
1 garlic clove
1 handful of fresh cilantro, chopped
¼ cup garbanzo or quinoa flour
1 tbsp onion powder
1 tsp dried thyme
1 tsp salt
½ tsp pepper
Brioche bread
Shiitake mushrooms, chopped
Sriracha mayo
¼ cup of vegan mayo
2 tbsp sriracha
1 tsp smoked paprika
1 tbsp nutritional yeast
1 tbsp lemon juice
To assemble:
Pickled onions
Shredded red cabbageAvocado
Fresh tomatoes
Fresh lettuce
Instructions
Peel and cut the sweet potatoes into squares. Boil until soft, and set aside to cool down. In a food processor add the garlic, black forbidden rice, lentils, miso paste, sweet potato, onion powder, salt and pepper, and thyme. Processed until well combined but still chunky.
Pour into a bowl and mix the flour, and chopped cilantro. Make into 4 burger patties. If it is too wet add a bit more flour. Set aside for 10 min until the flour sets. In the meantime, heat up 1 tbsp of olive oil and add the shiitake mushrooms with a bit of salt and pepper. Set aside.
In a pan add 1 tbsp of olive oil and cook your burgers.
Mayo Sriracha: Add all the ingredients and mix until well combined. Adjust for taste if needed
To assemble the burger:
Toast the brioche bread. Add some sriracha mayo to both sides of the bread, lentil burger patty, mushrooms, tomato, cabbage, and pickled onions.
For a gluten-free option: you can use #grilledportobello caps instead of bread to make it even more juicy and delicious
