Summery Quinoa Salad
Nothing beats a yummy, summery, delicious quinoa salad. I have many so many versions of this one and I often go back to the one I had when I was the owner of a juice bar in Miami called CPR. When we first started we only offered juices, smoothies, and bowls and I remember vividly the first time we put the quinoa salad bowl on our menu, it flew out the shelves within the first hour. It was our best seller and I brought it back just for you. This is a simple staple in my kitchen- especially when I am feeling like I want to have a day off the kitchen!
Vinaigrette
2 tbsp olive oil
1 tbsp lemon juice
1 tsp honey
1 tsp Dijon mustard
Salt and pepper to taste
Ingredients:
Makes 2
1 cup of uncooked quinoa
½ mango cubed
1 tbsp pomegranate seeds
1 cup of sliced cherry tomatoes
¼ cup fresh herbs: basil, cilantro, parsley
1 cup of greens- spinach, lettuce, watercress
1/2 sliced avocado
METHOD
Rinse the quinoa thoroughly and drain it.
In a medium-sized pot, combine the quinoa and water, and bring to a boil. Reduce heat to low, cover, and simmer until the quinoa is tender and the water is absorbed about 15-20 minutes. Remove from heat and let cool.
In a large mixing bowl, combine the cooked quinoa, mango, pomegranate seeds, cherry tomatoes, fresh herbs, and greens.
In a separate small mixing bowl, whisk together the olive oil, lemon juice, apple honey, Dijon mustard, salt, and pepper to create the dressing.
Pour the dressing over the quinoa salad and toss until well combined.
Finally, add the sliced avocado on top of the salad and serve immediately
