Everything Breakfast Bread

I have 2 versions of this bread for the flour combination:

Dry

  • 1 cup gluten-free oats

  • 1 cup GF Flour

  • 1 cup almond


Or

  • 1.5 cups gluten-free oats

  • 1.5 cups almond flour

  • 1 tbsp baking powder

  • 1 tbsp cinnamon

  • ⅛ tsp salt

Wet

  • ⅓ cup coconut oil

  • ⅓ cup maple or date paste

  • 1-1.5 cups of non-dairy milk

  • 2 tsp vanilla extract

Fold in

  • 1 cup chopped spinach

  • 1 cup shredded carrot

  • ½ cup goji berries

  • 1 cup blueberries, frozen

  • ½ cup mulberries *optional

    Instructions:

  • Preheat the oven to 375F. Grease a 9”x 5” loaf pan.

  • In a large bowl, whisk together the dry ingredients. In a separate bowl mix in the wet ingredients. Add the wet to the dry until well combined. Fold in spinach, carrot, berries, goji & mulberries- if using.

  • Transfer the batter to a loaf pan and bake for 45 min

  • Let it cool completely before removing it from the pan and slicing
